Red Beans and Rice very nice

Mondays in South Louisiana and red beans and rice are as closely linked as bacon and eggs or lobster and drawn butter. I was always told that the reason for the connection was that Monday was traditionally wash day. It was easy to put on a pot of beans. Even though the wash day tradition is a thing of the past, nearly every restaurant throughout South Louisiana features red beans and rice on the Monday menu. I'll take it any day.

Fresh okra revisited

Okra is a decidedly southern delicacy. In fact, to the uninitiated, "delicacy" may be an overstatement, but to those of us who know and love it, okra is a treat best eaten fresh. As I opined in a recent post about gumbo, fresh okra has been especially plentiful lately.
